Honey Dijon Chicken

Honey Dijon Chicken by MyHeartBeets.com

This is a classier version of what you’d expect honey mustard chicken to taste like. It’s a recipe that’ll make everyone happy – kids and adults. It’s sweet, but it still has a little bite to it. The dijon, medium-hot mustard, and the freshly ground black pepper add a little heat to what would otherwise be a fairly sweet dish.

Honey-dijon chicken =  a little sweet, a little tangy, and a little spicy. It’s surprisingly flavorful given that the ingredient list is so short. There are only 7 ingredients – and if you’re not counting salt and pepper (because they really shouldn’t count), then there are only 5 ingredients. It’s a dish you can have on the table within 30 minutes.

The key to making this dish is to stir-fry the chicken first – without any sauce – so that the outside of the chicken becomes a little crisp. Meat naturally releases water, so if this chicken starts to release too much water, then be sure to increase the heat on your stovetop. You don’t want the chicken to boil in its own juices, you want to stir-fry it. While the chicken is cooking, quickly mix together the honey mustard sauce. Once the chicken is done, add the sauce. Easy, right?

I decided to cut the chicken into smaller pieces to give the chicken more surface area. That allows for more of the honey glaze to coat the chicken. It’s simple math really. And it’s probably the only time I ever use math in real life… when I’m trying to figure out how to make chicken as flavorful as possible. ?

Serve this with whatever greens you’d like. The last time we ate this, I served it with a side of zucchini noodles and salad. It was fantastic. Enjoy!

Instructions

  • Heat 2 tablespoons oil in a large skillet over medium-high heat. Add chicken, salt, pepper, turmeric and stir-fry until the chicken is golden brown and cooked through, about 20 minutes. If the chicken begins to release water, increase heat to high and continue to stir-fry.
  • While the chicken is cooking, combine the dijon mustard, honey and 1 tablespoon of oil together in a small bowl.
  • When the chicken is done, turn off the heat. Then pour the honey mustard sauce overtop and mix well.
  • Sprinkle with additional freshly ground black pepper if desired, then serve.

Just finished having this for dinner. Doubled the sauce recipe as one other reviewer mentioned. Whoa! Asked husband (who is NOT Paleo) how he liked it…answer “I LOVE IT!” This was way too good. Will absolutely make this one again. Thanks Ashley! Keep ’em coming! Love that this one has just a few ingredients and maximized taste!
