It’s time for another meal plan! If you’ve been following along on the blog and on social media, then you know I’ve teamed up with ALDI to create some easy and flavorful meal plans for you over on the ALDI blog, Hello, Healthy. All of these meals are easy to make on a busy weeknight and they’re packed with flavor:
Zoodles with Vodka Sauce: I think you’ll be pleasantly surprised with how flavorful the sauce is in this recipe. My “vodka” sauce is dairy-free and paleo-friendly, but you’d never know it! Top this dish with creamy goat cheese and prosciutto for a light meal, or add sautéed mushrooms, leftover chicken or ground beef to make this a more filling meal.
Sage Ground Beef and Green Beans: Ground beef is my go-to protein on busy weeknights because I almost always have it in the fridge. I typically serve this dish over rice, cauliflower-rice or quinoa. If you have leftovers, eat it for breakfast with a fried egg on top!
Spicy Rosemary Breakfast Hash: Have a breakfast for dinner night! This “breakfast” hash is perfect for any time of the day – after all, it’s meat and potatoes! The garlic, paprika and fresh rosemary work so well together in this dish. I’m sure that if you make this once, you’ll make it again and again.
Chipotle Chicken and Green Beans: This is a must-try chicken dish. It’s a little spicy, a little smoky and perfectly savory. Serve this over rice or eat it alongside a big salad.
