Beef and Prune Stew: I bet you’ve never tried this combination before! This sweet and savory stew is the ultimate bowl of comfort. The dried plums break down to create a thick and fruity sauce, making this spiced stew feel more like a rich curry. I love eating this served on top of a bowl of rice, cauliflower-rice or quinoa.
Spiced Beef Stuffed Apples: Stuffed apples sound and look fancy but they are really so darn easy to make – as long as you’ve got a melon baller handy. If you don’t, just chop these apples up and stir-fry everything together in one pot. This recipe is what winter dreams are made of: sweet apples, toasty walnuts, tart and chewy cranberries, crunchy celery and perfectly spiced ground beef.
Eggs in a Spicy Tomato Sauce (Shakshouka): This dish looks kind of like an egg pizza without the crust! If you’ve never tried this before, you’ll be surprised at how well eggs and ripe tomatoes go together. If you can’t get your hands on ripe tomatoes, you can use canned diced tomatoes to make this too!
Spicy Shredded Mexican Beef: Make this super simple meal in a slow cooker and you’ll end up with delicious, tender and flavorful shredded beef. You can serve the meat over a bowl of rice or on top of a salad. Add some fresh diced avocado and stir-fried veggies to make this a full meal.

Is the Power Quinoa Salad with Parsley Pesto from Week 3, Day 4 your recipe? I also see it on The Healthy Apple’s page from Week 5 Day 1 so I’m a bit confused. I made it and it’s delicious, so I recommend it either way!
