So, this may come as a surprise to you… but, I happen to really like beets.

Oh, you already knew that? Was it the name of my blog that gave it away? Well, it’s true – I love beets. They’re tasty and beautiful. There’s no other vegetable out there with a color so vibrant.

    Hi Ashley,
    I love your posts! I rely on your recipes when trying some new dishes especially when I am debating between two instant pot (vegetarian) recipes.
    I tried beet halwa during my trip to Gujarat last month. We have guests next week, so I thought of making it, and immediately thought of searching your site if you have a recipe. I don’t see it. Can you please add it when you find time from your busy schedule running around your 4 year old and even more w your very active 9 month old?

    I love the new look of your website. Your are very creative. You have an excellent sense of photography and presentation skills. Your search engine is very organized and so finding a recipe using a filter is very easy!

    Just a suggestion, in future, when you have more time on hand, may be try creating recipes without onion and garlic and add it under your special diet catagory. Some of our friends follow “Swaminarayan” religion and don’t eat onion and garlic. It’s challenging for me to think “ outside the box” to serve them.
    We have two daughters. Older one is in second year medical school in Chicago and younger one finishing up undergrad at UCLA and start medical school end of July. My older daughter has very busy and stressful medical school routine typically from 6 am -10 pm daily or longer. So may be you can share some quick fixing instant pot recipes to your site as well?

    Looking forward to your beet halwa some day, until then, I will Jett to follow other recipe and my instinct to make it for our gujju guests next week!
