After perusing pinterest for 10 minutes (okay, an hour), I saw the different things that people were making with tomatillos (soup, dressing, pico de gallo). I saw a lot of creamy tomatillo ranch dressing recipes – unfortunately, they were all made with pre-made ranch seasoning (think Hidden Valley), buttermilk, mayo – things that I can’t eat. So, I improvised with the few real food ingredients that I had on hand and came up with this delicious creamy tomatillo ranch dip.

First, I roasted several ingredients (tomatillos, garlic, onion, jalapeno) to help concentrate the flavors. I used this same method in my salsa verde recipe. Then, I blended the roasted vegetables with avocado, apple cider vinegar, coconut milk and spices. The end result = a thick and creamy dip, perfect for carrot sticks, sweet peppers and other sliced vegetables. I also used this tomatillo avocado dip as a thick dressing smothered on top of my crispy carnitas and it was amazing. If you decide to use this dip as a salad dressing, you may want to thin it out with coconut milk or water first.

Ingredients
 

  • 10 to matillos
  • 4 garlic cloves
  • 1 small onion
  • 1 jalapeno
  • 1 avocado
  • 2 teaspoons dried dill
  • ½ teaspoon black pepper
  • 1 ½ teaspoon salt
  • 1 teaspoon apple cider vinegar
  • 1/3 cup coconut milk canned and full fat

Instructions
 

  • Broil tomatillos, garlic, onion and jalapeno for 5 minutes. Flip everything over and broil for another 5 minutes.
  • Add the roasted vegetables (and their juices) to a blender along with the remaining ingredients and puree.
