Creamy Tomatillo Ranch Dip

Ingredients

  • 10 tomatillos
  • 4 garlic cloves
  • 1 small onion
  • 1 jalapeno
  • 1 avocado
  • 2 teaspoons dried dill
  • ½ teaspoon black pepper
  • 1 ½ teaspoon salt
  • 1 teaspoon apple cider vinegar
  • 1/3 cup coconut milk, canned and full fat

Instructions

  1. Broil tomatillos, garlic, onion and jalapeno for 5 minutes. Flip everything over and broil for another 5 minutes.
  2. Add the roasted vegetables (and their juices) to a blender along with the remaining ingredients and puree.
