Heat 2 tablespoons oil in a large skillet over medium-high heat. Add chicken, salt, pepper, turmeric and stir-fry until the chicken is golden brown and cooked through, about 20 minutes. If the chicken begins to release water, increase heat to high and continue to stir-fry.
While the chicken is cooking, combine the dijon mustard, honey and 1 tablespoon of oil together in a small bowl.
When the chicken is done, turn off the heat. Then pour the honey mustard sauce overtop and mix well.
Sprinkle with additional freshly ground black pepper if desired, then serve.
