What is Gajar Halwa?

Gajar ka Halwa (gajrela) is a delicious and rich carrot pudding made by cooking carrots with ghee, milk, sugar, and a bit of cardamom. It’s the perfect dessert to make for any celebration, including Valentine’s Day which is coming right up! It’s perfect for Easter too – after all, the Easter Bunny loves carrots, right? Right.

I can’t tell you how many times I had to make and re-make this recipe. The first time I made gajar halwa in my Instant Pot, I had my dad taste test it and was told to immediately try again lol. 😂

This classic Indian dessert has been my dad’s favorite sweet since childhood. He knows what great gajar halwa tastes like and has very high standards. This recipe has his stamp of approval. Yes, there is quite a bit of ghee in the recipe but if you’re going to make gajar halwa then according to my dad, “it should be done right.”

This recipe is made in an Instant Pot and while it is much faster than my stovetop recipe, it will still require a bit of time and patience as you’ll need to stir the carrots in ghee to fry them a bit, which adds great flavor.

Secrets to Making Perfect Gajar Halwa:

When my parents were visiting us in Pittsburgh about a year ago, my dad and I made this dessert no less than 10 times in one week just to make sure it was perfect since it would be going in my cookbook. We tested it using both dairy and dairy-free ingredients – so yes, you can make a dairy-free carrot halwa but the dairy version calling for ghee and milk is better. We ate a lot of it that week and froze a good amount of it too (p.s. this dessert freezes well!). During the trip, my dad taught me a couple of secrets to making a proper carrot halwa:

  1. Wait to add the ghee until after you pressure cook the carrots as that helps give the halwa that desired dark orange/red color.
  2. You don’t need to use a lot of milk to make this dessert but don’t cut back on the ghee.

It was really fun creating this recipe with my dad. Before the visit, he would mainly cook on the stovetop but while testing this recipe with me, he saw firsthand how cool the Instant Pot is, and nowadays he uses his Instant Pot all the time, calling to tell me what new thing he made and how well it turned out. I also ask both him and my mom to test my new recipes to let me know what he thinks. My parents live in another state but when we share our recipes over FaceTime, it feels like we’re right next to each other in the kitchen.

How to Make This Carrot Halwa Recipe

Add carrots, milk, water and pressure cook!

Mix in some sugar and saute for a bit, then add ghee and stir-fry until the halwa is done. Spice it up with some cardamom and it’s done! So simple.


Is carrot halwa served hot or cold?

You can serve carrot halwa hot, cold, or at room temperature. It’s delicious however you decide to enjoy it. If it’s cold outside, I prefer to eat warm halwa and if it’s hot out, I prefer cold halwa.

Can I use butter instead of ghee in Gajar Halwa?

You can use butter instead of ghee if you’d like, it’ll provide the same richness, however, ghee adds a nuttier flavor to the halwa so personally, I prefer the flavor of ghee in Indian sweets.

Instant Pot Gajar Ka Halwa (Indian Carrot Halwa)

This classic Indian dessert has been my dad’s favorite sweet since childhood. He knows good halwa and he loves this recipe. My dad actually helped me come up with the method for making this delicious, rich halwa. He taught me a couple secrets to making this recipe: 1. Wait to add the ghee until after you pressure cook the carrots as that helps give the halwa that desired dark orange/red color. 2. You don’t need to use a lot of milk to make this dessert but don’t cut back on the ghee.

Ingredients
 

  • 1 pound carrots grated/shredded (approx. 4 cups)*
  • ½ cup whole milk or full-fat canned coconut milk if dairy-free/vegan
  • ¼ cup water
  • ½ cup sugar
  • 4 tablespoons ghee or coconut oil if dairy-free/vegan
  • teaspoon ground cardamom
  • Chopped pistachios or other nut garnish

Instructions
 

  • Add the carrots, milk and water to the pot. Secure the lid, close the pressure valve and cook for 1 minute at high pressure.
  • Open the valve to quick release any remaining pressure.
  • Press sauté and add the sugar. Stir for 6-7 minutes, or until most of the liquid has reduced. Then, add the ghee and stir-fry the carrots for another 6-7 minutes, or until the carrots become dry and the ghee separates from the mixture. The carrots should look dark orange/reddish in color.
  • Add the cardamom, mix well, then garnish with chopped nuts.

Notes

  • *Use a food processor to shred the carrots, it’s fast and easy. If you use store-bought shredded carrots, the halwa will be a little thicker but that’s absolutely fine too.
  • You can stir raisins or any type of nut into this halwa if you’d like!
  • I don’t use khoya when I make halwa, but if you’d like to use it, feel free to mix it in at the end when adding cardamom powder.
  • If you are making this for a dinner party, serve a small portion of halwa with a large scoop of ice cream.
  • If you want to make this dairy-free, you can use full-fat coconut milk and coconut oil instead of ghee (but it won’t taste quite as good).

    Hello, so I finally got around to making this today. I’ve had this once in a restaurant before and making this it turned out okay so to speak but tasted a little weird. I used Grassfed Ghee. Do you think that would of made a difference ? Thank you for your help. Also my carrots didn’t shred in food processor, more like small chunks.

      Hi Christie, did you use a shredding blade in your food processor? That will help – and the texture is important for this recipe. Small chunks are likely the reason it tastes off – the grassfed ghee won’t hurt – if anything, high-quality ingredients will only help.

    So I never really liked carrot halwa and now it is my favorite! I could literally eat the entire pot! I think it’s the solid recipe with fresh ingredients but wow! Thanks for sharing this one! Lots of exclamation points but deservedly so.

    Tried garar ka halwa in my ninja foodi op300 today and it was amazing.
    I followed the exact same measurements and times mentioned without any changes.
    We are visiting friends this weekend but do not have time to travel to the suburbs to buy indian sweets.

    I have a question – why does the instant pot recipe have 1/2 the coconut milk, yet twice as much carrots as the stovetop version? Is it purely because of evaporation? I’m trying to decide which to try first and noticed this huge difference.

    Recipe is super delicious, however it only made the smallest bowl. It’s maybe 2-3 portions instead of 6. After taking time to make it I unfortunately have to do it all over again, not sure if it was something I did. Super yummy though.

I don’t think you did anything wrong – halwa servings are typically small as they are a very rich dessert. I understand the disappointment as I always want more too lol.

    My only issue is there is always lot of liquid left over after the pressure cook. So have to saute longer

      Hi Archana, that’s odd there’s a lot of liquid left over – are you using a 3 quart? All of my recipes are tested in a 6 quart – I’m wondering if you’re using a smaller pot? If not then I’m not sure what the issue might be…

    I have been doubling this recipe and making it every week or two and then just having a small portion everyday. I have very pale skin and tend to look sickly unless I keep up on eating colorful veggies, especially carrots seems to help. So I’ve just decided to eat this all the time. I tried reducing the sugar and it seemed fine to me (but I’m not Indian and not picky), and I recently started just substituting erythritol for the sugar, and it was great. Thanks for such a delicious, healthy, and helpful recipe.

    My mom used to make gajar halwa every winter for Diwali . I used to watch her labor over the stove, constantly stirring until she could tap someone in . This recipe was nostalgic in the best way. Carrots in the winter lend the perfect sweetness, the sugar complements it and per Ashley’s notes , though khoya is optional , it’s addition made it a true Delhi gajar ka halwa. We served this for thanksgiving last year alongside some vanilla ice cream – YUM!!

    Delicious! Superb! Thank you. It was better than the restaurant version. I just added a handful of golden raisins when I pressure cooked the carrots. At the end I added a little more cardamom and some dried whole milk powder at the end since I did not have Khoya.

    Great recipe. Thank you for posting. My kids loved it so much I made it twice in a week.
    A little heavy on the butter and sugar so I cut down on both the second go around and it still turned out great.
    Recommend crushed pistachios on top for serving for textural contrast.

    Thank You Ashley!! I made my first ever gajar ka halwa today and my super skeptical husband who is very particular about how well bhunoed his halwa usually is was bowled over. No more store bought halwa for me now…I tripled all the ingredients and it turned out very well….just increased the saute time by 10 more minutes while constantly stirring it.

    I realize this may not even get approved to appear on the site…but I must say, I just did step 1 and did a quick release and milky liquid spewed out everywhere. I should’ve listened to my gut instincts when I read that you mix the mix and water into the pot together to cook. Dairy in the pressure cooker rarely ever ends well. With all the good reviews, I went ahead and did. Boy do I regret it. I didn’t do anything differently. My pot sealed fine, the valve is proper, I used exact liquid measurements and carrots as written in recipe. EXTREMELY disappointed. Gotta clean orangy milk from my walls and surrounding area. I don’t care how good this tastes, very poorly written recipe.

      I agree – this is the 2nd recipe I found online that said to quick release the instant pot but the first time I did it….milk went everywhere for me too! I don’t understand it because everyone seems to love the recipe. It was delicious and I am making it again right now but I am letting my instant pot slow release the pressure itself. Then I will saute with sugar, etc.

      You can use a food processor with a grating attachment – it’s very helpful! Otherwise you can try pre-shredded carrots – I haven’t tried this but it might be a good option.

      You can serve it any way you’d like – hot or cold works! I personally prefer it hot/warm. And yes you can make it in advance, store it in the fridge until you’re ready to serve 🙂 It actually freezes well too!

    Excellent recipe…my customization for a vegan version was to add about 3/4th cup or so of peeled raw and finely ground almond paste (soak them in boiling water and pinch the skin off first). Also added some kesar (saffron) and elachi (cardamom) and cooked it with the carrots. One thing to note is to put as little water in the paste etc. In my case, it was a little extra and I removed it and boiled it off on the stove. After releasing the pressure, removed the carrots and sauteed the nuts and raisins in Earth Balance (vegan butter substitute).

    I just love this recipe, I have made it some many times. I was wondering if I double the amount of carrots do I double everything else and still give pressure for 1 min?

    Tried your carrot halwa recipe, and the result was superb! Replaced whole milk with a can of evaporated milk (just because I had that lying around in my pantry).

    Excellent trick in getting that dark orange color!!! I went through several carrot halwa recipes online but found none that came close to this wonderful idea of roasting in ghee at the end. Thanks to you and your dad for sharing! Also loved the recipe for its simple ingredients (and the fact that it doesn’t require khoya to make it taste and look so decadent :))

    Looks delicious! How do you make it look so wonderful orange color? I have tried it (different recipe) once but it is much dull colored than yours here! I am thinking of using those tiny finger-sized ready to eat carrots. They look quite orange to me.
    I also wanted to ask about khoya… Is it enough to add it as it is in the end like you mentioned? You really don’t need to cook it at all?
    How about condensed milk? Will it make it richer somehow? 🙂

      Hi Samir! The orange color comes from roasting it in the ghee at the end – it’s a trick I learned from my dad 🙂 As for khoya or condensed milk – you can add it at the end and saute for a few minutes but I suggest tasting the halwa before you do. I think you will love this dish without those two things. It’s very rich thanks to the ghee! Let me know how it turns out for you!
