The best part about the holidays: family and food. In the past, I’d spend hours preparing for guests, but now that I’m a new mom, I have to spend my time wisely. After all, most of my waking hours are spent doting on a handsome little guy who relies on me for everything. Babies are so adorably helpless, aren’t they? Yep, I’m clearly in the new mom bliss stage (that’s a thing, right?).

My point is – these days, I prefer to make recipes that take less time away from my little one. Enter: these goat cheese jalapeño poppers. They’re my go-to appetizer for easy entertaining.

These spicy and sweet poppers are a no-stress appetizer. You can assemble them in advance, stick them in the fridge and then pop them in the oven right before your guests arrive.


I filled these poppers with three different types of goat cheese that I bought from ALDI: plain, blueberry vanilla and cranberry cinnamon. I was only going to get one type of goat cheese, but Roby came to the store with me and whenever that happens, we end up buying all the things. I’m so glad we got all three flavors because it made for a nice variety. I loved the blueberry vanilla and Roby loved the cranberry cinnamon.

I think the flavored goat cheese gives these poppers a festive feel. I love the extra sweetness too – it really complements the heat of the jalapeños.

A few things to keep in mind when making these:

  • Make sure you wear gloves when handling the jalapeños! You don’t want to accidentally rub your face after touching them. Ask me how I know.
  • Don’t forget to remove both the seeds and the membrane from the jalapeño – otherwise your poppers will be super spicy.
  • And finally, the secret to milder jalapeño poppers: bake them for a few minutes before filling them with goat cheese OR just bake the whole thing for a longer period of time.

Prosciutto Goat Cheese Jalapeño Poppers

Ingredients
 

  • Jalapeños
  • Goat Cheese you can find flavored cheese like blueberry vanilla or cranberry cinnamon at your local ALDI store
  • Prosciutto slices

Instructions
 

  • Preheat oven to 400F.
  • Wearing gloves, slice the jalapeños in half and scoop out the seeds and membrane.
  • Stuff the jalapeños with goat cheese.
  • Wrap prosciutto around the jalapeño and place on a parchment-lined baking sheet.
  • Bake for 15 minutes at 400F or until the prosciutto is crispy. For a milder jalapeño, increase baking time to 30 minutes.
