Properties of Green Cardamom:

Green Cardamom comes from an herb related to ginger, Elettaria, which grows in India and Malaysia. Cardamom is used to add flavor to food and drink, as spice when cooking, and for medicinal purposes. Some species of cardamom have been an important cash crop for many poor farmers in China, Laos and Vietnam. Nepal was formerly the world's largest producer of cardamom but has recently been overtaken by Guatemala.

How to use Green Cardamom:

Green Cardamom is best stored in pod form due to the seeds for flavor after being exposed or ground. Ten pods equal roughly the same quantity as one and one-half teaspoons ground cardamom. Some cooks prefer to grind the pods containing the seeds, while others open the pods and use only the seeds. Some experimenting may be fun. A coffee or spice grinder can be used on whole pods or seeds, and a mortar and pestle can be used on seeds alone.

Cardamom Roasted Baby Carrots

INGREDIENTS

  • 1/2 teaspoon ground cardamom or (Ground seeds from approx 5 pods)
  • 1/4 teaspoon sea salt
  • 2 teaspoons olive oil
  • 2 teaspoons honey
  • 1/2 pound baby carrots (Greens removed, except the bottom bit if desired)
INSTRUCTIONS
  1. Preheat oven to 400 degrees F.
  2. Adjust rack to the center.
  3. Peel carrots and place them on baking sheet.
  4. In a very small bowl, mix cardamom, oil, honey and salt.
  5. Use pastry brush, or fingers, to thinly coat carrots with honey mixture. (Keep remainder for basting.)
  6. Roast carrots on baking sheet in preheated 400 degree F oven, basting them approx every 8 mins until tender, approx 25 mins.
  7. Remove from oven and baste once more for an appetizing shine.

Cardamom Bread

INGREDIENTS

  • 3/4 teaspoon ground cardamom (Ground seeds or from approx 5 pods)
  • 1 egg, room temperature
  • 3 tablespoons butter, softened
  • 1 1/2 tablespoons water
  • 3/4 cup milk
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 3 cups bread flour
  • 2 1/4 teaspoons Red Star Quick Rise yeast
INSTRUCTIONS
  1. Combine 1 cup flour, yeast, and other dry ingredients.
  2. Combine milk and water, heat to 120-130 degrees F.
  3. Combine liquid ingredients, dry mixture, and butter in mixing bowl with paddle or beaters on medium speed for 4 minutes.
  4. Add egg and beat for 1 minute.
  5. Gradually add remaining flour and knead with dough hook for 5-7 minutes until smooth and springy.
  6. Place dough in lightly oiled bowl and turn to grease top.
  7. Cover, let rise until dough tests ripe.
  8. Turn dough onto lightly floured surface.
  9. Punch down to remove air bubbles.
  10. Divide dough into 3 parts.
  11. Roll each piece into a 16 inch rope.
  12. Line up ropes 1 inch apart on greased cookie sheet.
  13. Braid loosely.
  14. Pinch ends together and tuck under.
  15. Cover, let rise until indentation remains when touched.
  16. Brush with milk and sprinkle with 1 tablespoon sugar.
  17. Bake in preheated 375 degree F oven for 20-25 minutes.

Cardamom Mango Lassi

INGREDIENTS

  • 1/4 teaspoon ground cardamom (Ground seeds or from approx 2 pods)
  • 1/4 cup honey
  • 1/8 teaspoon sea salt
  • 1/3 cup coconut water
  • 2/3 cup coconut milk
  • 2 cups mango chunks (fresh or frozen, don't add ice if using frozen)
  • 2 cups plain yogurt
  • Ice - optional only if using fresh mango
INSTRUCTIONS
  1. Combine all ingredients in blender and mix until smooth.
  2. Taste and add more honey for additional sweetness if desired.
  3. Add ice if desired.
  4. Fill glasses and garnish with a sprinkle of cardamom.
  5. Lassi stays fresh for a day if covered and refrigerated.

    This is my first experience with cardamom at home. It is February, and blood oranges are just hitting the stores in my town; I found a recipe for blood orange tart, it called for cardamom pods.

    I don't know the differences between different types, but this was cheaper than the pre-crushed spice jar at my local grocery store. Not only is it organic, but I imagine it is much fresher. I don't have a hyper-sensitive sense of smell or taste, but I could smell this cardamom, even before I opened the shipping pouch. It comes packed in a thick, plastic, resealable bag. When I opened it and buried my nose in the bag, I was struck by a strong menthol aroma. Sharp, fresh, minty-citrus. I insisted that my husband smell it (before I commented on my opinion of it), he described it as STRONG, bitter, citrus.

    I cooked the tart a day after I received it; the menthol/citrus aroma really accentuated the blood oranges and complimented the sweetness in the layers. This stuff seems VERY FRESH and BRIGHT. I can't wait to find other uses for it!

    I will definitely purchase green cardamom pods from Indus Organic again. These are without a doubt the best I have ever had.
    And organic as well.

    Below are ideas to use them in coffee or tea. There is no need to grind the pods or seeds in order to use them in coffee or tea.

    Coffee: This idea came from a Persian friend. Using a french press, add some pods (about 2 per cup) to the bottom of the pot along with the ground coffee. The pods should be pierced open but add both the seeds and the pod itself. Then continue as you would have without the cardamom. Pour in boiling water. Steep as you would normally. Press and enjoy. With or without milk and with or without sugar. Your choice. If you use a french press and like cardamom you may never make coffee without cardamom again.

    Tea (Chai): Pierce open about 2 pods per cup of tea (or more or less to taste) and place in a pot. Using a ratio of 3 parts water to 1 part cows milk or unflavored soy milk and add to pot. Add either black tea bags (for most people that would be one per cup: I like strong tea so I use 2 per cup) or 1 teaspoon loose black tea per cup. Simmer for about 3 or 4 minutes. Strain into cups and add sugar to taste. For me that is about 1/2 teaspoon for a cup. For most people that would be about 2 teaspoons for a cup.

    You should vary these rough recipes to your own taste as the variations could be endless. But enjoy these very fine cardamom pods!

    Okay, I have to admit this is an acquired taste, (for me anyway). I had not used this before, even in the powdered form & was taken by surprised at how strong the taste was. Wow! I have learned to open the pod & take out only 3 or 4 of the seeds & I don't chew them immediately. Instead I hold them in my mouth for a while & the gently bite them now & then. Eventually I just swallow the remnants. These have been helpful for me because I have a dry mouth & this helps to prevent gum disease. It's also a good health supplement. I would have given it 5 stars, but the taste overwhelmed me at first. Awesome price compared to the cardamom powdered seasoning at the grocery store.

    I have used mainly brown cardamom in my coffee every morning and wanted to try the green, so ordered this. I love it! The pods are fresh and quite delightful in coffee. I am a bit obsessed--I look forward to going to bed at night just to get coffee in the morning, especially since adding cardamom to my brew. It has great health benefits and my gut is happy with it! You've got to try it! I grind mine with a mini spice grinder I bought here on Amazon just for cardamom. But be sure to only open the amount of pods you intend to use immediately. The quality declines once you've opened a pod. Green cardamom has a more fruity taste to my mouth, brighter somehow. Brown is smokier and less intense. Both are very good for you and it's definitely worth the investment.

    I found a recipe for Ginger tea and Cardamom pods was an ingredient I had never before heard of. I looked it up and found it on this site and thought I would give it a try. I was not disappointed. The flavor is great. I now use ground Cardamom in most all of my Bean and Vegetable cooking and it never fails with its warm full bodied taste. A true delight for your taste buds. The Green Cardamom Pods are of very good quality and need to be cracked before use. This is easily done with the flat side of a cooking spoon. Shipping was prompt and packaging was adequate. Overall a very good experience.
