- 2 pounds tomatillos, husks removed and rinsed
- 1 jalapeno
- 1/2 white onion
- 3 garlic cloves
- handful of cilantro
- 1 lemon, juiced
- 1 teaspoon fine sea salt
- Broil tomatillos, garlic, jalapeno and onion for 10 minutes, flipping the vegetables over at the halfway mark.
- Pour the roasted ingredients (and juices) into a blender along with the lemon juice, cilantro and salt. Blend until smooth.
