Roasted Salsa Verde

Ingredients

  • 2 pounds tomatillos, husks removed and rinsed
  • 1 jalapeno
  • 1/2 white onion
  • 3 garlic cloves
  • handful of cilantro
  • 1 lemon, juiced
  • 1 teaspoon fine sea salt

Instructions

  1. Broil tomatillos, garlic, jalapeno and onion for 10 minutes, flipping the vegetables over at the halfway mark.
  2. Pour the roasted ingredients (and juices) into a blender along with the lemon juice, cilantro and salt. Blend until smooth.
  3. Serve.
