Spicy Parsnip Hummus

  1. Bring a large pot of salted water to a boil.
  2. Add the parsnips and boil until soft, about 15 minutes.
  3. Drain the parsnips and place them into the food processor.
  4. Add the tahini, lemon juice, garlic, salt, olive oil and red pepper flakes.
  5. Puree until smooth.
  6. Taste and adjust salt accordingly.
  7. Sprinkle with paprika for garnish.
