Chocolate Sauce

To Make Waffles

  • Preheat waffle iron.
  • Add all of the ingredients (except chocolate chips if using) to a blender and blend until smooth.
  • Pour the batter into the waffle iron, sprinkle chocolate chips on top of the batter, and use the appliance as directed. If you want to make the waffles really crispy, cook them for a longer time (I’ve cooked them as long as 10-15 minutes using my waffle iron).
  • Serve immediately. If saving these waffles for later, allow them to cool on a rack so that they maintain their crispiness.

To Make Chocolate Sauce

  • Add the chocolate and coconut oil to a heat safe bowl and using the double-boiler method, place the bowl on top of a small saucepan filled with water. Heat the saucepan until the chocolate has melted.
  • You can also melt the chocolate in 10-20 second intervals in the microwave.

You don’t need to use a blender to mix the ingredients, but I find that it’s easier to use the blender to pour the batter into the waffle wells.
