You are going to love these pillowy soft cookies! They are so easy to make – you literally only need three things to whip up a batch of these sweet and puffy cloud-like cookies.
You know how cookie cakes are a thing, right? Well, have you ever tried a cake-y cookie? As in, a cookie made from cake mix? I used to make these types of cookies ALL the time in college. I’m pretty sure I won over my now husband with cake mix cookies. Once I started eating a gluten-free diet, cake mix cookies became a thing of the past. That is, until I saw gluten-free cake mix during a recent trip to ALDI. These are just as great as I remember!
The best thing about them is how easy they are to make. My son is a very mobile 9-month-old, which leaves me little time to do much else. We entertain a lot and having a box of this cookie mix makes dessert a no-brainer. You only need three things to make these cookies: cake mix, eggs and oil (plus whatever additional mix-ins you’d like! Why hello, chocolate chips.).
There are plenty of gluten-free cake mixes out there these days, but my favorite is the ALDI liveGfree Yellow Cake Mix, which recently received an award from the 7th Annual Gluten-Free Buyers Guide Gluten-Free Awards. You can get a box for less than $3*, which is way more cost-effective than any other brand out there. And it creates the most delicious, soft and crinkly cookies!
I love that every time I go to my local ALDI store, they have even more gluten-free products for me to try. I hope they continue to expand their selection because I am such a huge fan of their liveGfree line! The last time I was at ALDI, I did an Instagram Story of a few of my favorite products (did you see it?! If not, you can see a shopping guide here).
It’s no surprise to me that ALDI is one of America’s favorite grocery stores.* I feel like they are listening to those of us who want access to healthier, gluten-free options, and now they’re moving toward giving us the shopping experience that we want too. My local store got a makeover (chances are your local ALDI could be getting a makeover too, check it out and let me know what you think!) and I love it! I’m talking wider, brighter aisles and a new, modern look.
Which of course means I’ll be shopping there even more than I usually do. The ease of making these cookies may play a role in that 😉
It only takes ten minutes to bake these cake-like cookies. That’s right. You can have these perfectly crumbly cookies in your mouth in just 10 minutes (okay, more like 15 minutes, depending on how fast you can mix together the batter).
You can add a sprinkle of chocolate chips to the batter or you can leave it plain. Try adding nuts, raisins or spices to switch things up. These are so easy to adapt! I’m already thinking of tasty new combos to try next: chocolate chips + pistachios + cardamom or maybe chopped almonds + vanilla extract + cinnamon. What’s your favorite cookie flavor?
Ingredients
- 1 15 ounce box of gluten-free cake mix
- 2 large eggs
- ½ cup melted coconut oil or oil of choice
- Chocolate chips optional
Instructions
- Preheat oven to 350F.
- Mix all of the ingredients together in a bowl. Use a small cookie scoop to make balls and place them on a parchment-lined baking sheet about 1-inch apart. No need to flatten the cookies – they will spread out on their own.
- Bake the cookies at 350F for 9-10 minutes.

First of all, they didn’t flatten at all like I have cupcakes- and they are SO dry. Would be awful without chocolate chips. Don’t know what to do with 20 bad cookies

Worked beautifully! I did find that rolling them between your palms and flattening a bit helps to get the cookie shape. Otherwise they came out puffy and ragged looking but absolutely light and delicious in the middle.
I already use the Aldi brownie mix for double chocolate chip cookies so now I have a second option! Thanks so much!

Loved finding this as I am new to Gluten Free diet (thank goodness for ALDI). I have the yellow baking mix & wondered if I add cinnamon to the mix how much do you think I would need! Plan on cooking in an 8 x 8 pan! Trying to have something different for breakfast than cereal! Could I add fine chopped pecans?

Mary, that’s so great to hear! I think cinnamon and pecans would be a great addition! If it were me, I’d probably add 1 or 2 teaspoons of cinnamon.

I just made these tonight with add ins of white chocolate cranberry – oh my goodness they are soooo easy and soooo delicious! The Aldi cake and bakng mix works fine. I followed what others said and added an egg yolk, and I did half butter, half Spectrum shortening. I always put instant pudding mix in my cookies and though it was probably overkill I have white chocolate powder which I used a teaspoon of(I can’t have regular chocolate-makes my heart race). Followed your directions and now I can’t stop, they are heavenly! Thank you for this recipe- I’m gonna try out other add ins!

Thank you for posting this recipe. I am new to GF eating. I recently bought a box of liveGfree Yellow Baking Mix. I have yet to find a recipe using this particular baking mix. I love cake mix cookies and I’m wondering if the Yellow Baking Mix is the same as the Yellow Cake Mix and can I use the baking mix to make the cookies. Thank you for your help with this.

I also did not notice the reference to baking mix, rather than cake mix. I used it anyway to make these cookies. They turned out great! I added an egg yolk, extra. I read several years ago, in an article, about adding an extra egg yolk for moisture. I also added some mini chocolate chips. I will tell you I usually use Bob Mills vanilla cake mix for all kinds of baking. I found that it is best tasting and editable for my non-gluten free family. It does not have that “grainy” taste found in many gluten free products.
Ashley you mentioned your association with Aldi stores, well I would love if you could get them to bring back the Pizza LiveGfree crust mix, It was the best crust you could buy. My husband and grandson even liked it. I baked it in a cast iron skillet and it turn out delicious! Thank you for this great recipe!

These came out wonderfully but I found the aldi cake mix to be way too sweet for me. How do you suggest cutting down the overly sweet taste?

Hi Rubia! If it’s too sweet for you then maybe you can try to balance the sweeteness with unsweetened additions like cacao nibs which are a bit bitter or walnuts?
