Indian Green Peas and Eggs (Sukhi Matar Anda Sabzi)

This recipe takes just a few minutes to make, as long as you’ve got my onion masala ready to go! You just stir-fry green peas in the masala along with some spices, then top the peas with hard-boiled sliced eggs! Enjoy this dish as a snack or as a meal.

This is a simple recipe that my grandma (nani) used to make for my mom when she was a kid. My mom made it throughout my childhood and still continues to make it, so it’s very familiar to me. It’s called sukhi matar anda sabzi which basically translates to dry peas and egg cooked in gravy. You can just call this Indian green peas and eggs if you want. 😉

Indian green peas and eggs is a super simple dish – something that my mom would throw together when we needed a filling snack or when we needed to use up extra hard-boiled eggs. In fact, we often make this stir-fry for Easter, when we have plenty of colorful dyed hard-boiled eggs to use up.

This Indian stir-fry is what I like to call a “dry curry.” Dry curries are nice because they’re a little different. I feel like most Indian recipes – at least, most of the popular ones – call for a lot of gravy. While I do love gravy, sometimes it’s nice to change things up. This is the type of dish that you’ll find Indian parents making for their kids. It’s a quick dish made with humble ingredients: frozen peas and hard-boiled eggs.

Making this dish couldn’t be easier. You stir-fry (frozen) green peas in onion masala and spices, then top it with sliced hard-boiled eggs. Garnish with paprika and cilantro and you’re done. Well, don’t forget to carefully layer the egg slices on top of green peas  – according to my mom, presentation is key to this dish and I have to agree.

  • Add oil to a sauté pan and place it over medium heat. Allow it a minute to heat up, then add the cumin seeds and once they turn brown, add the green peas, spices and onion masala.
  • Stir-fry the green peas for 2-3 minutes, or until they are cooked through, coated with spices and look a bit fried (this will take an extra few minutes if you’re starting with frozen onion masala).
  • Place the green peas on a platter and top with sliced hard boiled eggs. 
  • Sprinkle a pinch of paprika on top of the eggs and garnish with cilantro leaves.

How to make hard boiled eggs in an Instant Pot:

  • Places 2 cups water into the steel pot then place a steamer or trivet inside. Place the eggs on top of the steamer.
  • Secure the lid, close the pressure valve and cook for 5 minutes at high pressure.
  • Naturally release pressure for 5 minutes, then open the valve to release any remaining pressure.
  • Place the eggs in a bowl of ice cold water for 5 minutes, then peel and slice.

Notes

  • If you are vegan or do not eat eggs, you can top the green peas with sliced cooked potatoes. I suggest sprinkling a little salt and pepper on top of the potatoes along with the paprika and cilantro leaves.

    I decided to meal prep this for lunches. I tripled the amount of spices and doubled the amount of peas and it was perfect. It is good cold with thinly sliced hard boiled eggs, Super tasty and soo easy to make!
