After filling myself up on delicious roasted salsa verde, I decided that I wanted to do something different with my remaining tomatillos. After perusing pinterest for 10 minutes (okay, an hour), I saw the different things that people were making with tomatillos (soup, dressing, pico de gallo). I saw a lot of creamy tomatillo ranch dressing recipes – unfortunately, they were all made with pre-made ranch seasoning (think Hidden Valley), buttermilk, mayo – things that I can’t eat. So, I improvised with the few real food ingredients that I had on hand and came up with this delicious creamy tomatillo ranch dip.

If you’re wondering what to make with your tomatillos, try this tomatillo avocado ranch dip!
Ingredients
- 10 to matillos
- 4 garlic cloves
- 1 small onion
- 1 jalapeno
- 1 avocado
- 2 teaspoons dried dill
- ½ teaspoon black pepper
- 1 ½ teaspoon salt
- 1 teaspoon apple cider vinegar
- 1/3 cup coconut milk canned and full fat
Instructions
- Broil tomatillos, garlic, onion and jalapeno for 5 minutes. Flip everything over and broil for another 5 minutes.
- Add the roasted vegetables (and their juices) to a blender along with the remaining ingredients and puree.
