I spend too much of my life waiting.
And I’m not talking about waiting in line or in doctors’ offices (though those things happen too).
What I mean is, every year I wait for weekends. I wait for holidays. I wait for my birthday. I wait for special events. I spend so much time anticipating great times that I don’t always enjoy every day. And now that 2014 is pretty much over, I’m a little in disbelief that it passed by so quickly. Don’t get me wrong, I had a wonderful year filled with weddings (so many!), a trip to Florida with my two best friends (husband and brother), and a lot of quality family time. But, I think I failed to enjoy every day… every single day.
For the past few weeks, I’ve been brainstorming a list of new year’s resolutions – just like I do every year. I decided that come January 1, I’d make those changes. But you know what? I’m tired of waiting.
Toss the list.
Why are we waiting to better ourselves? I realize that Jan. 1 is just days away and if you want to wait until that day to make changes, go for it but if you fall off the wagon or take a few missteps, don’t wait until another special magical day to provide you with the motivation you need to change whatever is holding you back from enjoying the day.
I’m excited about 2015, I really am but I’ve decided that I have all the motivation that I need to change now or whenever I choose.
I want to be healthier, so I’ve been getting up at 5am lately to work out – and by work out, I mean dancing to Just Dance 2015 alone in my living room. Hey, it’s a start.
I want to be nicer, so I’ve been trying to make an effort to smile more, listen more, forgive more and care more.
I want to stress less, so I’ve been working on prioritizing what really matters in life and trying not to worry about the rest.
I want to enjoy life more, so I’ve decided to stop waiting and start living/loving/doing.
And, there’s one other thing I want to do right now – I want to share this simple recipe for pepperoni garlic bites with you. I know, it took me awhile to get to the meat of this post (pun intended)… these salty raw garlic-stuffed olives wrapped in pepperoni slices are a simple, tasty and filling snack. Sure, you can buy already stuffed organic olives but they’re a little more pricey and when you make them yourself, you get a much stronger garlicky flavor. Not only does this simple snack taste good, it’s also good for you. Olives are high in monounsaturated fat and raw garlic is nutrient-rich and can help boost the immune system. If you’re not big on raw garlic (aka you’re a vampire), you can fill these with something else instead – I bet blue cheese would be good. These bites also make for an easy hors d’oeuvre for a get-together or a party. Don’t wait, make these now.

Ingredients
- 1 pepperoni slice
- 1 green olive
- a thin slice of a raw garlic clove adjust to taste
Instructions
- Fold the pepperoni slice so that both edges are facing the middle.
- Stuff an olive with a piece of raw garlic and place it on top of the pepperoni, and roll up.
- Secure with a toothpick.

These look yummy, but neither pepperoni nor pimento-stuffed olives are nightshade free as both contain peppers. 🙂
