This spiced pistachio shake is the BEST shake I think I’ve ever made. It’s cold, creamy, nutty, and sweetly spiced. You will feel completely refreshed after just a few sips!
This shake calls for spices like cardamom, ginger, and cinnamon. It also calls for nuts. I’m a big fan of adding nuts to milk-based drinks – it adds both texture and richness. And there’s just something about sipping on a cold, nutty, milky drink that shouts summer to me. I think it’s because I grew up in an Indian household, where cold nutty drinks and desserts are “a thing.” To me, summertime means lots (and lots) of Kulfi, Rasmalai, Thandai, and homemade nut milks (almond or coconut).
You can make this with the milk of your choice. I have made this countless times, using whole milk for my husband and switching it up between coconut milk or almond milk for myself. You can’t go wrong. I will say, if you can tolerate dairy then whole milk is the way to go; it’s rich and very dessert-like.
I hope you make this drink very soon! Summer heat has nothing on this chilled spiced pistachio shake. Make sure to serve this drink over as many ice cubes as you can fit into your glass.

I just made this recipe tonight and it is Delicious! Here is what I did:
1/2 C pistachio pieces
1 C almond milk, organic, unsweetened, vanilla flavored
1 C coconut milk from a carton by So Delicious, organic, unsweetened, vanilla (it’s a nice creamy milk)
1 TB honey
Couple drops liquid Stevia
all spices in the recipe except fennel
Blended in my blender, poured over ice cubes … yum! and very refreshing! I find if I use Stevia, best to use one other low glycemic sweetener with it. I am sensitive to sugar so that is what I do to minimize amount of sweetener.
