I have made the most perfect gluten-free brownies, ever. That’s right, ever. They’re perfectly fudgy, soft, delicious and they hold their shape. My junk-food lovin’ husband couldn’t believe they were grain-free and paleo-friendly – he even compared them to the Ghirardelli brownies he used to enjoy eating before he married me. Besides tasting amazing, these brownies also happen to be ridiculously easy to make. You blend everything up in a blender, fold in some dairy-free chocolate chips, pour the batter into a pan (this is the one I used) and bake. I call these delicious fudgy, cakey treats: Blender Brownies (creative, I know).
I’m in a celebratory mood this month so I wanted to do a really cool giveaway for you guys. I’ve teamed up with Blendtec to offer one of my lucky readers the chance to win a blender. I have this same one and love, love, love it.

- Preheat oven to 350º F and lightly grease the bottom and sides of a glass baking dish or a brownie pan with ghee.
- In a large mixing bowl, whisk together all of the dry ingredients.
- Add the wet ingredients to your blender – and blend until smooth.
- Pour in the dry ingredients and blend until smooth.
- Mix in the chocolate chips and then pour the batter into the pan.*
- Bake for 25 minutes – or until a toothpick comes out clean.
- Allow to cool before cutting.
- Store brownies in a container in the fridge.
*Line the pan with parchment paper if you want to make it easier to lift them out.
The brownies taste great warm or cold.
