Just when I thought my morning cold brew couldn’t get any better… I came up with this frosty frozen coconut mocha. It reminds me of a Mounds bar – you know those terrible-for-you candies made with dark chocolate and coconut? I used to LOVE those. You don’t have to feel guilty about drinking this creamy coffee concoction – that’s because unlike a Mounds bar, my drink is made with awesome-for-you ingredients.

Healthy fats: coconut oil and shredded coconut. There’s also cacao powder which is a source of antioxidants, magnesium and iron.

To make this frozen coffee drink, you’ll need a powerful blender – one that can totally obliterate ice cubes. My Blendtec is pretty powerful and it took me a good two minutes to get this mocha to reach a perfectly creamy consistency.

If you don’t like coconut then well, honestly I’m surprised you’ve made it this far into the post. If that’s the case though, you can leave out the shredded coconut and coconut oil. This drink will still be quite tasty!

Top the drink with some cacao nibs for a little crunch, and you’ve got one decadent morning drink!

    This was amazing! I did not have shredded coconut so I used Coconut flakes instead. I found that it hardly needed any sweetener at all. Thanks for sharing this with us!

    Woah, this looks amaaaaazing. I am always looking for new ways to use my Vitamix (gotta justify the cost, right?!) I cannot wait to try this. I think I’ll use maple syrup as a sweetener. YUM.
